- Mixing Bowl

○ You can use a bamboo steamer, a metal steamer, or a steam rack. It’s used to steam the momo

- Ingredients For MOMO Dough
- 300 g plain flour
- 175 ml water, approximately
- Ingredients for Filling:
- 500 g chicken ground meat
- 1/2 cup red/white onion, finely chopped
- 1 cup green/white cabbage
- 1/2 cup green spring onion, finely chopped
- 1 cup coriander, finely chopped
- ¼ tsp MOMO masala
- 1 teaspoon red chilli powder
- ¼ tsp turmeric
- Salt to taste
- 2 tsp. fresh ginger/garlic paste
- 3 tsp. mustard, vegetable oil or melted butter
- 1/2 cup of water
- Ingredients for MOMO Achar:
- 1 cup soybean seeds
- 1/3 cup white sesame seeds (Teel)
- Normal oil
- 1/2 tsp. cumin seeds (Jeera)
- 3 green, red chili
- 2 tsp. garlic ginger paste
- 1/2 teaspoon turmeric powder.
- 3 medium tomatoes
- Salt to taste
- 2 tsp. lemon juice
- Some chopped fresh coriander/mint leaves
Making the wrapper:
- The first step is to prepare the dough.
- Mix the flour, salt, and melted butter in a bowl. Add water gradually and knead to form a smooth and elastic dough. This is done to ensure that the dough is not too sticky or dry.
- Cover it with a damp cloth and let it rest for about 30 minutes.
Making the filling:
- Chop the ingredients into fine pieces.
- Combine all the chopped ingredients and the spices with the minced meat, and mix thoroughly until well blended. Add some melted butter to make the filling juicy. In this step, make sure to mix the spices thoroughly. For the meat, chicken, pork, or buffalo can be used.
- After the filling is prepared, we stuff the momo.
- Divide the dough into small balls and roll each ball into a thin circle.
- Place a spoonful of filling in the center of each circle. Don’t add too much or too little filling, and while folding the edges, the filling should not overflow.
- Fold the edges to seal and shape the momos.
- Finally, the last step is to steam the momo.
- Place the momos in a steamer and steam for about 10-15 minutes, or until the dough becomes slightly translucent. Put some oil in the steamer before placing the momo in the container so that the momo doesn’t stick to the steamer. Ensure that there is some distance between the momos when placed in the container so that they don’t stick together.
Following these steps results in a delicious snack that can be enjoyed with everyone. This recipe is quite simple, and you can make some achar to bring out the best out of the dish. Serve the momos hot with a side of spicy dipping sauce or achar.
Making the achar:
- First, add a tablespoon of oil to the pan.
- Add cumin seeds, ginger garlic paste, and chopped red chilies.
- Add the chopped tomatoes, salt, and turmeric, and cook until they become soft and mushy.
- Add the chopped coriander/mint leaves.
- Add the ground sesame seeds, soybean seeds, and lemon juice.
- Let it cool for 10 minutes.
- Then blend to a smooth paste.
