Bod on the Block: Faculty suggest easy meals
What do you think is an easy, quick and healthy meal for college students to prepare?
Tracy Routsong
Assistant Dean CAS & Professor
College of Arts and Sciences
“If you have access to the fridge and microwave, bagged Salad with Chicken (or a vegetarian supplement) can be a great option. I am also a fan of the serving size of flavored tuna.”
Chris Jones
Assistant Professor of Religious Studies/Philosophy
College of Arts and Sciences
“An easy, quick, and healthy meal I serve my family once a week is high-protein penne pasta with marinara sauce and a side salad. It wouldn’t cost much and can be enough for 4-6 servings (so there are leftovers if you live alone).”
Kelly McClendon
Lecturer Intensive English
International Programs
“Two ideas that came right to my mind are: Eggs scrambled with whatever sautéed veggies or cooked meats you have on hand and Kielbasa sausage (find it near the lunch meats) and a jar of sauerkraut.”
Carson S. Kay
Lecturer, Communication Studies
College of Arts and Sciences
“I’m a big fan of soup. If you have access to a stove or cooking pot, then canned soup can be an inexpensive and comforting meal (tomato soups and vegetable soups are some of my personal favorites). If you don’t, some microwavable options are also delicious.”
